Bio
Hi there - I’m Mariah! I am a Licensed Professional Counselor in Oregon and a Licensed Mental Health Counselor in Washington. I received my bachelor’s degree in psychology from Western New England University and my master’s degree in counseling psychology from American International College. I am currently working on my master’s of science in Kinesiology with a concentration in sport and exercise psychology from University of North Carolina - Greensboro. I recieved EMDR training through the EMDRIA approved trainer Thrive Learning & Publications.
My focus is working with adult women struggling with disordered eating behavior. I am open to working with clients with a variety of disordered eating behavior however I have most experience working with individuals struggling with binge-eating, binge-restrict cycles, yo-yo dieting, and orthorexia. I have a background in sport and exercise as well and like to support women who love fitness but have struggled with a difficult relationship with movement/food while engaging in their athletic pursuits. This is not limited to "traditional athletes." There are so many people who do not consider themselves "athletes" but that struggle with their relationship with exercise and food and could be dealing with symptoms such as chronic undereating for their activity level, overwhelming hunger leading to binges, and loss of menstrual cycle.
I am currently accepting graduate student interns for supervision starting Summer/Fall 2025.

Emily Velasquez, registered dietitian nutritionist, has been a caregiver with Providence since 2022. Emily provides one-on-one nutrition counseling rooted in the Intuitive Eating and Health at Every Size ® philosophy, specializing in patients with disordered eating and eating disorders. She received a dual bachelor’s degree in nutrition and dance from Buffalo State College, where she also completed her 1,200-hour supervised practice experience within the coordinated dietetics program. Her interest in eating disorders began as a dancer, and while in college she researched perceived energy needs of dancers compared to their actual needs. This interest carried on into the general population, seeing the ubiquitous damage of diet culture and the growing prevalence of eating disorders. Prior to Providence Emily's experience includes working at a higher level of care with eating disorder patients at Center for Discovery, as well as working at Nike World Headquarters. Emily is passionate about helping individuals fuel their bodies while developing a healthy relationship with food. Emily’s interest in dance nutrition continues, with a passion to prevent and treat eating disorders in dancers, as well as improve overall performance and reduce injury risk. Emily still loves to dance in styles of ballet, contemporary, salsa and bachata.

I provide compassionate and evidence based nutrition counseling. I am also a Certified Intuitive Eating Counselor, and weave this into the work I do. I love supporting adults who have identified that whatever they are doing isn't working anymore, and are ready to dig deep into their food and body story, in order to find relief and maybe even freedom. I also work as a clinical dietitian, and am able to support clients with other health conditions, including but not limited to digestive issues (IBD, IBS), type 1 and type 2 diabetes, etc.
I provide individual nutrition counseling via telehealth, but also offer educational grocery store tours and in home cooking lessons in the greater Portland and Vancouver area. You can learn more on my website!

I believe that food plays an important role in connecting us to ourselves and also to those we care about. When an eating disorder or disordered eating develops, it disrupts the relationship with oneself and with others. My goal is to meet you where you are in your recovery process and help you begin or continue your journey. For some individuals, that means having a more structured approach to eating, and for others it means giving yourself permission to eat more freely. My style is to be honest and straightforward, and to support you in finding better ways to nourish your body. If you enjoy being active, and are healthy enough to do so, we can also work on motivations for being active and improving your relationship with physical movement. My approach tends to be direct and supportive, always working within a treatment team. I hope to help you understand why you have used eating disorder behaviors from a nutrition perspective, and help you learn to let them go. I practice from a HAES, non-diet and weight inclusive approach.

I bring my authentic self to sessions with my clients, as well as creativity, collaboration, and a bit of humor. I enjoy using a combination of art therapy and traditional talk therapies to help my clients reach a greater sense of wellness in their lives. Most of my clients are adolescents (ages 14+) and adults experiencing anxiety, depression, trauma, and/or eating disorders. I work often with clients who are neurodivergent thinkers (ADHD, Autism), and/or folx who identify as members of the "rainbow" community (LGBTQIA2S+).
